Ingredients

  • 1 can (12 oz / 354ml) evaporated milk
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1½ tbsp vanilla extract
  • 2 large eggs
  • 2 large egg yolks
  • 2 cups granulated sugar (for the caramel)

Instructions

  1. 1In a large bowl or stand mixer, add the evaporated milk, condensed milk, vanilla extract, eggs, and egg yolks. Whisk or blend until well combined. Set aside.
  2. 2In a non-stick pan, add the sugar and heat over medium-high heat, stirring occasionally, until golden brown — this is your caramel.
  3. 3Pour the caramel into your baking pan. Tilt and turn the pan to spread it evenly to the edges. Let it harden.
  4. 4Once the caramel has hardened, pour the custard mixture over it.
  5. 5Place the pan inside a larger pan and fill the larger pan halfway with water to create a water bath.
  6. 6Cover the custard with aluminum foil and bake at 325°F (163°C) for 1 hour, or until a toothpick inserted comes out clean.
  7. 7Let cool, then refrigerate for 1–2 hours, or overnight.
  8. 8Carefully flip onto a deep dish plate and enjoy.
