Flan

Ingredients
- 1 can (12 oz / 354ml) evaporated milk
- 1 can (14 oz / 397g) sweetened condensed milk
- 1½ tbsp vanilla extract
- 2 large eggs
- 2 large egg yolks
- 2 cups granulated sugar (for the caramel)
Instructions
- 1In a large bowl or stand mixer, add the evaporated milk, condensed milk, vanilla extract, eggs, and egg yolks. Whisk or blend until well combined. Set aside.
- 2In a non-stick pan, add the sugar and heat over medium-high heat, stirring occasionally, until golden brown — this is your caramel.
- 3Pour the caramel into your baking pan. Tilt and turn the pan to spread it evenly to the edges. Let it harden.
- 4Once the caramel has hardened, pour the custard mixture over it.
- 5Place the pan inside a larger pan and fill the larger pan halfway with water to create a water bath.
- 6Cover the custard with aluminum foil and bake at 325°F (163°C) for 1 hour, or until a toothpick inserted comes out clean.
- 7Let cool, then refrigerate for 1–2 hours, or overnight.
- 8Carefully flip onto a deep dish plate and enjoy.
